Melissa's story
Her mission is to understand the celebration you are planning so she can design the cakes and pastries that will be an extension of the event, showpieces that everyone will admire and remember.
Introduction
Melissa grew up
in a small town in Minnesota, always knowing
she wanted to cook professionally. Upon graduation from the Culinary
Institute of America in New York, Melissa realized that pastries
were
her passion and set off in a sweet direction.
After assisting with the opening of Commander's Palace in Las Vegas, she moved to San Francisco where she created fabulous desserts for Moose's Restaurant, Lark Creek Inn, and Michael Mina's and produced special occasion cakes for the Noe Valley Bakery. Along the way, she fell in love with a native New Orleans boy.
In 2005, she and her husband, Thomas, decided to make a commitment to the city of New Orleans by buying their first home, rebuilding it themselves, and moving in as newlyweds. As the Head Pastry Chef at the Windsor Court Hotel, Melissa redesigned the dessert menus and created edible showpieces, including three feet tall panoramic chocolate Easter eggs and breathtaking gingerbread displays. In the spring of 2008, with her wedding on the way Melissa left Windsor Court to pursue her dream of owning her own business and Melissa's Fine Pastries was born.
